Chilli Gazpacho

A winner for summer days, Gazpacho is an easy to make, delicious and refreshing cold soup.

Ingredients:

1 onion
1/2 cucumber (chopped in cubes – keep some for decoration)
1 pepper (deseeded and chopped in cubes – keep some for decoration)
1 clove of garlic
1 L tomato juice
60 ml olive oil
60 ml white wine vinegar
1/2 tsp sugar (or xylitol for a fructose free option) – optional
1 tsp up to 1 tbsp chilli flakes (according to your taste!)
salt and pepper

Preparation:

Place all the ingredients in a (power) blender. Pour the soup in a bowl and refrigerate for at least an hour.

To serve, pour the soup into individual plates and decorate with the cubes of pepper and cucumber, and fresh basil or herbs if you have some.
