Chai Latte Biscuits
I came up with this fragrant biscuit recipe because I wanted to use my masala tea spice mix, bought at my local Indian shop, for something else than just making chai latte! If you can’t find masala tea ground mixed spices, you can make the mix yourself. The ingredient list on my pack is as follows: ginger (40%), cardamom (25%), cinnamon, cloves, black and white pepper.
1 cup wholemeal flour
1/2 tsp baking powder
1 tbsp tea masala spices
pinch of salt
1/3 cup sugar (for a fructose-free version, you can use sweeteners such as stevia or xylitol)
1/4 cup vegetable oil
1 or 2 tbsp almond milk (or any plant milk of your liking)
Pre-heat the oven to 180 degrees C.
In a bowl, whisk together all the dry ingredients. Then pour the oil and combine. Knead it until you get a dough, you’ll need to add one or two tbsp of milk for that. Don’t worry if it’s a bit crumbly.
Roll the dough into small balls and flatten them into thick discs (depending on the size, you’ll get between 8-10 biscuits). Place them on a baking tray covered with baking paper.
Place in the oven and bake for 15mins. Once cooked, take them out and let them cool down.
