The recipe below will yield about 4 glasses. You can easily adapt the quantities according to your preferred texture and taste.
1 cucumber, peeled and chopped
330ml coconut water
1 lime, juice
a handful of fresh mint leaves
a few ice cubes
Put all the ingredients (except for the ice cubes) in a blender and mix until completely liquid. Pour in a glass and add an ice cube or two.
