I’ve tried a few vegan French toast recipes in the past, mainly using flour, plant milk and various ingredients but none of them impressed me much. So when I found Tara Stiles’s easy simple recipe with bananas, I knew I was on to something! I tweaked it a little bit so that it reminded me of my childhood memories – my mum always used to put orange blossom water in the batter -Â and because I always do: I’m terrible at following instructions! 😀
In terms of bread, the harder the better. You can use any bread you fancy: gluten free, wholemeal, spelt etc. (You can also use fresh brioche if you so desire…)
2 bananas, very ripe
1 cup of plant milk (I like almond, coconutÂ and hemp)
1 tbsp. orange blossom water
1 tsp cinnamon
a few slices of dry bread
coconut oil for the pan
Mix the bananas, milk, cinnamon and orange blossom water in a blender until completely liquid.
Pour the batter in a bowl and leave the bread soaking in the mixture to absorb it. Feel free to go and do something else in the meantime!
Pour the oil in a pan and fryÂ the slices of bread on both side at a high temperature.
Serve it with maple syrup, blueberry compote, peanut butter or eat it plain. The banana mixture caramelises and makes it super yummy.
