For this recipe I was inspired by Tinned Tomatoes’ black bean pâté . I like bean, mushroom or any kind of vegan pâtés as they are so easy to make and so convenient in sandwiches, for a quick aperitif nibble, etc. Tinned Tomatoes’ recipe is very nice and I would encouraged you to try it. I’ve adapted it for my taste, and I also wanted something with a firmer texture.
- 1 can black beans (400g)
- 1 can red kidney beans (400g)
- 1 tbsp cumin powder
- 1 tbsp onion powder
- 1 tbsp chilli powder
- 1 cup oats (gluten free if required)
- 1/4 cup coconut oil (warmed up so it’s liquid)
- juice of 1/2 lemon
- salt and pepper
Mix all the ingredients in a blender for a few seconds. Put it in a mini loaf tin, mason jar or any container you want and place it in the fridge for a few hours. Serve with bread, oatcakes / rice cakes, or use in sandwiches.
