Pan con tomate

IMG_5586Let’s face it, Spain isn’t a great place to live for vegans. Apart from gazpacho and patatas bravas, everything is prepared with meat, seafood or cheese! But surprisingly, it is in Spain that I’ve picked up one of my favourite breakfasts: Pan Con Tomate. They serve it for breakfast in cafes everywhere. It’s definitely healthier than churros con chocolate (!), and it’s filling, delicious and really fast and easy to make!

Ingredients:

A couple of tomatoes
1 clove of garlic
Olive oil
Salt
Bread, sliced

 

Instructions:

Place the tomatoes and the garlic in your blender and process until smooth and liquid.

Spread the tomato mix on either fresh or toasted bread, depending on your preference.

Season with salt and spread oil on top. That’s it,it’s ready!

Have fun by experimenting with different oils, add herbs and other spices. I often add pepper and basil for example. And I like to use fresh rye bread.
