Chestnut biscuits (Vegan, Gluten free, Sugar free)
This recipe is a wonder! It is so easy and quick to make, the chestnut flour gives a lovely flavour to the biscuits and by using rice malt syrup (feel free to substitute it for stevia if you prefer), it makes them fructose free. What’s not to like?!
Ingredients (for 8-10 biscuits):
1 cup chestnut flour
3 tbsp coconut oil
2 tbsp rice malt syrup or stevia
(coconut milk – optional)
Pre-heat the oven to 190 degrees Celsius.
If the coconut oil is solid, melt it in boiling water or the microwave.
Mix the ingredients together in a large bowl and make a ball out of it. If the dough is too dry or powdery, add more coconut oil or coconut milk (little by little, you don’t want it to be too wet).
Roll out dough using a rolling pin directly about 1 cm thick and cut out cookies.
Place them on a piece of parchment baking paper.
Bake for 15 mins or until golden.
